How do you guys track your crypto gains/losses?

Hey guys, fairly new to crypto.

I was wondering, how do you guys track your crypto gains/losses? I mean, you just leave the crypto you just bought in an exchange or in a wallet, or you create an excel data table or something like that that tracks how many crypto you have and how much FIAT that correspond to?

If somebody uses somehing like excel (or whatever software), can you please give an example of how you structure your spreadsheet?

I'm trying to figure it out and arrange something in excel, however if find it kinda difficult to structure my data table. Sorry, I'm a newbie :(
